Vegan dining in Eugene, Oregon: Cornbread Cafe (again), Part 2

During our last visit to Eugene, we had two breakfasts at our favorite restaurant, Cornbread Cafe. (In case you missed Part 1 of this short series, click here.) Since there were three of us, we got to sample a lot of this amazing cafe’s delicious offerings. Among them: the biscuits and gravy, which comprised beautiful fluffy vegan biscuits smothered in seitan gravy. (The gravy is rich and thick and quite salty, so salt-lovers can rejoice.)

My very favorite is the Eggfu Benedict: Cornbread’s gorgeous vegan eggs, topped with sautéed spinach and cashew-based Hollandaise sauce, which is rich, tangy, and delicious. Along with fresh fruit and home fries, it is perfection.

Another favorite was the rancheros: scrambled, spiced eggfu served with tortillas, seitan bacon and Cornbread’s delicious home fries.

If you have a breakfast sweet tooth, the Belgian waffle is amazing — simple but tasty, with a scoop of vegan butter and maple syrup.

The breakfast burrito should not be overlooked; this gigantic concoction contains scrambled eggfu, home fries, seitan sausage, black beans, and salsa in a flour tortilla, and is topped with cashew unCheese.

Under “small plates” you’ll find this very satisfying “Sammy I Ammy,” a breakfast sandwich of eggfu, vegan sausage, and cheese on an English muffin, served with a huge side of home fries.

I can’t think of a better place to have breakfast — and while omnivores will love Cornbread Cafe as much as veg folks, it’s a special treat for vegans to know they can order anything on the menu without having to ask about animal products. Run, don’t walk, to Cornbread Cafe, whenever you are in Eugene!
