Escondido has a treasure in its Vegan Soup Bar downtown.
Right on Grand Avenue, there is both indoor and outdoor seating for this casual-dining spot.
The menu has an amazing selection of all-vegan items, from soups and salads to sandwiches and paninis. We tried one of the specials, a Vietnamese noodle dish that was excellent.
We also sampled the plain but delicious sandwich known as The Veg. (We would opt next time for the chickpea salad sammie; the chickpea salad, which we ordered to go and ate later, is amazing, like a savory vegan egg salad.)
Also delicious was the vegan toast with hummus, made with fresh bread and creamy, well-spiced hummus.
Whatever you do, don’t forget dessert! We had both a cinnamon roll and the chocolate-chip banana bread … but there are also vegan brownies, cookies, and carrot cake, to name just a few.
I can’t wait to return to this place to try every last item on the menu. I hope vegan and omnivores alike frequent this place; it’s simply glorious food (both the healthy and decadent options are wonderful), with something for everyone.
